Product Overview

Shiso-pickled umeboshi made with organic Nanko plums from Wakayama Prefecture and Japanese organic red shiso. Junzosen has specialized in umeboshi in Wakayama since 1940, using a recipe and craftsmanship passed down through four generations.

Features

  • Organic JAS certified, using selected organic Nanko plums grown without relying on pesticides or chemical fertilizers.
  • Japanese organic red shiso is rubbed with salt and processed to remove harshness on the day of harvest, bringing out a vivid red color without added coloring.
  • Made without chemical seasonings, coloring agents, or preservatives.
  • Sun-dried in summer in a dedicated organic greenhouse, with craftspeople judging the drying time to achieve plump, soft flesh.
  • 17% salt content, with refreshing shiso tartness and a traditional sour, savory taste.

How to Use

Enjoy with freshly cooked rice, in rice balls, or with ochazuke. It can also be added to shochu, used in ume-shoyu bancha, or incorporated into cooking as a flavor accent.
